Yum Alert: Pistachio Goji Berry Granola

Pistachios and goji berries are two (of the many) foods I could eat incessantly. This pistachio goji berry granola recipe will make it difficult to resist seconds, however I can’t wait to try it! Note: Recipe is gluten-free if prepared with certified gluten-free oats. Image and recipe via Love and Lemons.

Ingredients:

Yields 2 cups

  • 1 cup rolled oats (not instant)
  • 1/2 teaspoon salt
  • 1 tablespoon coconut oil
  • 3 tablespoons maple syrup
  • 1/3 cup pistachios, chopped
  • 1/4 cup coconut flakes
  • 1 teaspoon cinnamon
  • 1/3 cup goji berries
